Bottom dropping means anchoring or drifting over reefs, wrecks, and ledges and lowering weighted rigs with cut or live bait to the seafloor. It's how snapper, grouper, amberjack, triggerfish, and vermilion are caught — and the northern Gulf off Pensacola is famous for it thanks to thousands of natural and artificial reefs, including the USS Oriskany.
Trolling means pulling rigged baits and lures behind the moving boat to cover water, targeting open-water pelagics: king and Spanish mackerel, mahi-mahi, wahoo, and tuna.

The rose-red icon of the northern Gulf — sloped profile, red eyes, a mouthful of needle teeth. Pensacola sits at the heart of red snapper country; our reefs and wrecks hold huge numbers. Common catches run 5–20 lbs, with genuine 25+ lb sows possible.
Bottom dropping cut squid, cigar minnows, or live bait on multi-hook rigs over reefs, wrecks, and ledges in 80–200+ feet of water.
The benchmark Gulf table fish — mild, sweet, white, flaky fillets that grill, blacken, or fry beautifully. The fish that built Pensacola's charter reputation.
Red snapper can live 57 years — a trophy could be older than the angler holding it. And that famous red is camouflage: red light vanishes about 150 feet down, so a bright red fish looks dark and drab on the reef.

A heavy-bodied brawler, gray-brown with dark kiss-shaped mottling. Gags haunt ledges, wrecks, and hard bottom — and the fight is usually won or lost in the first ten seconds of their violent dive back into the structure.
Bottom dropping live pinfish or threadfin tight to ledges and wrecks. Heavy tackle is mandatory to stop the dive.
Among the best-eating fish in the sea — firm, white, mild fillets. The gold standard for the Pensacola Beach grouper sandwich.
All gags are born female — some later transition to male, and scientists still don't know exactly what triggers the change.

Rusty red-brown with pale blotches and a big mouth, red grouper are the most dependable offshore bottom fish in the Gulf — abundant on hard bottom in 60–300 feet, typically 5–15 lbs with 20+ lb 'fire truck' reds a real possibility.
Bottom dropping cut bait, squid, and live bait over hard bottom — a mainstay when snapper season is closed.
Excellent — mild, white, and firm; slightly sweeter and softer than gag. A Gulf Coast menu favorite.
Red grouper are 'ecosystem engineers' — they excavate pits in the seafloor that become habitat for dozens of other species. A red grouper hole is basically a tiny neighborhood.

A sleek silver torpedo with razor teeth, famous for blistering, drag-screaming first runs — 30+ lb fish are called 'smokers.' Kings patrol nearshore reefs and bait schools, and Pensacola's spring and fall bites are legendary.
Trolling stinger-rigged cigar minnows, threadfin, or ballyhoo — plus spoons and diving plugs — over nearshore reefs and bait pods.
Underrated — rich and oily fresh, and outstanding smoked. Gulf Coast smoked-kingfish dip is a rite of passage.
Juvenile kings have yellow spots nearly identical to Spanish mackerel — the giveaway is the lateral line: a king's drops sharply below the second dorsal fin.

A slim, streamlined cousin of the king, silver with rows of brassy-yellow spots. Spanish mackerel travel in big, fast schools and blitz bait at the surface — pure chaos on light tackle, in the best way. Most run 2–5 lbs.
Trolling small spoons and Gotcha-style plugs, or sight-casting into feeding schools — great action for kids and first-timers.
Rich and flavorful — superb smoked, grilled fresh, or as ceviche. A local secret tourists overlook.
Their teeth slice monofilament like thread, which is why we fish wire or heavy fluorocarbon leaders for them.

Pound-for-pound the hardest fighter on the reef — muscular silver-blue with an amber stripe and a dark bandit mask through the eye. They stack over wrecks and high-relief reefs; 20–40 lbs is common and 60+ lb monsters happen.
Bottom dropping live bait over wrecks, or vertical jigging with butterfly and speed jigs. Either way — hang on.
Firm, steak-like meat, best grilled or smoked. Many captains release the giants and keep the smaller keepers.
They're called 'reef donkeys' for the stubborn, mule-like fight — an AJ is the one fish that makes anglers ask for a break.

The most photogenic fish in the Gulf — electric blue, green, and gold with a long dorsal fin. Bulls grow a dramatic square forehead and can push 30–40 lbs. They school around weed lines, floating debris, and current rips.
Trolling ballyhoo, feathers, and chuggers along weed lines and rips — then pitching chunks to hold the school for frantic multiple hookups.
A restaurant superstar — mild, lean, firm white fillets, perfect blackened or grilled.
Mahi grow up to 4 feet in their first year and rarely live past 5 — one of the most sustainable pelagic catches. Their neon fades to gray within minutes of landing, so photos happen fast.

A big, chocolate-brown, shark-shaped loner with a broad flat head. The spring beach run (March–May) is a Panhandle tradition, and the Florida record — 130 lbs — was caught off Destin. Average fish run 20–40 lbs.
Sight-casting live eels, crabs, or jigs to cruising fish along the beaches and passes; also found on offshore wrecks and buoys in summer.
Elite — firm, white, steak-like fillets. Many chefs rank cobia among the top five eating fish in the Gulf.
Cobia are lazy-smart — they shadow manta rays, turtles, and bull sharks, letting their 'escort' stir up an easy meal.

A tough, gray, football-shaped reef fish with leathery skin, buck teeth, and a locking dorsal 'trigger' spine. They swarm offshore wrecks and are expert bait thieves. Usually 2–5 lbs.
Bottom dropping small, tough baits — squid strips on small hooks — over wrecks and reefs. They're nibblers, so the hookset has to be quick.
A hidden gem — sweet, white, firm meat often compared to crab. Many locals rank triggerfish above snapper at the table.
Press the second 'trigger' spine and the first folds flat — that's the name. At night the fish locks itself into a reef crevice so predators can't extract it.

A beautiful, slim, rose-to-silver snapper with faint yellow streaks and big eyes — also called mingo or beeliner. Usually 1–3 lbs, but they show up in big numbers and save many a trip.
Bottom dropping small cut baits or squid on light chicken rigs through the water column over reefs.
Excellent for their size — sweet, delicate white fillets, wonderful fried whole.
Vermilion often school 20–60 feet above the reef rather than hugging bottom — count down the drop and you'll dodge the bait-stealing pests below.

A striped, torpedo-shaped rocket with razor teeth — one of the fastest fish in the ocean, with bursts estimated near 60 mph. Solitary ambush predators over deep structure; 15–60 lbs typical, 100+ lb fish possible.
High-speed trolling at 10–17 mph with weighted lures and rigged ballyhoo over ledges and rips. Wire leaders essential.
Arguably the best-eating pelagic — firm, white, mild, sweet. In Hawaii it's called 'ono,' which literally means 'delicious.'
Wahoo have been recorded leaping 20 feet out of the water while chasing lures.

The most common tuna in the northern Gulf — football-shaped, dark-backed, and built for speed, typically 5–20 lbs. They bust bait around shrimp boats, rigs, and rips.
Trolling small feathers and cedar plugs; chunking and live-chumming; sight-casting topwaters into feeding schools.
Superb — rich, sushi-grade loins. The local favorite for seared tuna and sashimi.
Tunas keep their swimming muscles warmer than the surrounding water — letting them hunt at speed in cool depths.

Blacktips, spinners, Atlantic sharpnose, and bulls patrol Pensacola's wrecks and bait schools — blacktips are the acrobats, famous for their spinning leaps. Strictly catch-and-release on our boat (except where FWC allows).
Hooked incidentally over the wrecks and reefs — and they fight like they mean it. Handled with care and released boatside.
Not on the menu here — these go back to patrol the reef.
They will absolutely try to tax your hooked snapper before it reaches the boat — great storytelling, and the occasional 'half a fish' photo.
